About the course

What can I expect out of this qualification?

The purpose of this qualification is:
- To provide competent employees for the hospitality sector who are able to work as chefs in senior positions producing advanced dishes in a professional kitchen.
- To establish standards of professional practice for advanced cookery that can provide customers with confidence in a range of hospitality environments.

Graduates will be able to plan, control and direct the day-to-day and long-term operations of a professional kitchen including supervision of staff.
The strands in this qualification allow graduates to have advanced general cookery skills or to specialise in pâtisserie.

Minimum requirements

General Requirements Domestic students * Applicants must be at least 17 years of age or older. (The age limitation for the LCQ units will be taken into consideration at the time of enrolment.) International students * Applicants must be 18 years of age or older. English Language Requirements International students for whom English is not a first language must either have: * Achieved, within the preceding two years, an IELTS (Academic) score of 5.5 with no band score lower than 5; or * An alternative NZQA approved proficiency outcomes for entry at level 5 study; or * Ignite Admissions English Test (applicants must be from countries allowed under NZQA's rule 18). Other Requirements * The practical and work-based learning components of this programme involves using commercial kitchen tools and equipment and requires students to demonstrate a level of skill that does not compromise any health and safety standards for her/himself and others. by NZQA.
